Small squid packed whole with the tentacles still attached, their bodies a pale translucent white and the skins a soft pinkish brown. They arrive cleaned and lightly blanched, so the meat is already firm and springy with a clean, faintly sweet finish rather than the heavy brininess of larger squid.
