About this item
Cut straight across the fish, each steak carries a section of the backbone with the skin left on and a thick band of flesh either side. The meat is a deep orange crossed with fine white lines of fat that keep it moist as it cooks, and the bone adds flavour while protecting the flesh from drying out. Sear it in a hot pan, roast it on a tray, or wrap it in foil with lemon and herbs.
